The new Saturday plan: lunch at NINA by Diego Muñoz

NINA by Diego Muñoz in St. Regis Cap Cana already had a strong personality during dinner service. Now, the restaurant is opening a completely different experience during the day.

Cocktails, long lunches, a different energy and a view that completely changes how the space is experienced.

A menu designed for a different rhythm

While some dinner elements remain, such as selected grilled cuts, the lunch proposal introduces dishes created specifically for this time of day.

“We have several things made exclusively for lunch, both in the kitchen and at the bar,” explains chef Diego Muñoz.

The idea is not to transfer the dinner menu into daytime service. Instead, the goal is to create an experience with its own rhythm and language.

“The dinner and lunch programs at NINA are different experiences, and that’s exactly what we want: for people to enjoy the restaurant in different moments”, he says.

Even so, the essence of the restaurant remains the same. Precision, product quality, and attention to detail continue to be central to the concept.

The view completely transforms the experience

During the day, the restaurant takes on a different energy.

Natural light, open views of Punta Espada Golf Course, and the connection with the sea completely transform the NINA experience.

“It completely changes the setting. There’s more openness in the view, and it definitely feels like a different side of NINA”, says Muñoz.

The new concept also leans into a more relaxed and social atmosphere.

According to the chef, the goal is for the restaurant to become a true long lunch destination, where the experience extends through cocktails, wines by the glass, music, and a menu designed to be enjoyed without rushing.

A culinary identity with its own language

Even while sharing space within the hotel alongside other dining concepts, NINA continues to move under its own culinary vision. “NINA already has its own DNA, culinary style, and language”, says Muñoz.

That identity also creates a clear distinction from other concepts within the property, offering an experience with a very defined personality.

 

Hours and reservations

Lunch service will be available on Saturdays from 12:00 p.m. to 3:00 p.m.

Reservations are open for both hotel guests and outside visitors through OpenTable.
