Hyatt Ziva Cap Cana
A hidden speakeasy where dinner comes with an element of surprise.
Behind a 1950s-style butcher shop at Hyatt Ziva Cap Cana is something entirely unexpected: The Blind Butcher, a speakeasy where dinner comes with an element of surprise.
And getting inside is part of the experience. What initially looks like a vintage butcher shop conceals the entrance to the restaurant. The way in? A hidden refrigerator door that leads into the main dining room.
From there, the concept brings together South American flavors, cocktails, design and live entertainment through a four-course dinner.
The Menu
Five countries help shape the culinary direction of The Blind Butcher: Peru, Brazil, Argentina, Colombia and Venezuela.
Rather than reproducing their cuisines literally, the menu takes ingredients, preparations and flavors associated with them and gives them a contemporary interpretation.
Peru Brazil Argentina Colombia Venezuela
are also connected by another idea: nature. Earth, air, fire and water provide the framework for the menu and help move the experience from one chapter to the next.

Live Entertainment
This isn’t the kind of restaurant where entertainment is saved for later.
Performances take place throughout dinner, alongside music and tableside moments that change the pace of the evening. At times, the focus is on what’s happening on the plate. At others, it’s somewhere else in the room.
We won't tell you much more than that. The surprise is part of the experience.
Cocktails & Wine
South America also provides the starting point for the cocktail menu. Ingredients and references from different countries find their way into the signature drinks, extending the concept beyond the food.
Wine is part of the experience as well, with an international selection and pairing options available to accompany the menu.

The Design
The secret entrance may be the first indication that design matters here, but it doesn’t stop at the refrigerator door.
Inside, lighting, textures and the atmosphere of the dining room create a clear contrast with the vintage butcher shop outside. The setting becomes another part of how the story is told throughout the evening.
That approach earned The Blind Butcher a Gold Award at the 2024 Travel Weekly Magellan Awards in the Luxury (Five-Star) Restaurant Design category.
